Flashback Friday – Peanut Butter And Jelly
Happy Friday, guys! This morning I realized I hadn’t quite meal-prepped enough food for the week, and needed something for lunch today. I thought about just grabbing some fast food, but I try to be pretty frugal with my money, and decided against that.
We had a loaf of bread at the house- which we rarely have, but my step daughter is spending the summer with us and makes sandwiches for her lunch each day. So I decided I’d make me a peanut butter and jelly sandwich.
The thought of this brought me back to elementary school! I have always been a really picky eater, and 95% of the time I would take my lunch to school. The only time I ate in the cafeteria was pizza day, I think! Pretty sure my lunch was almost ALWAYS a PB&J. Usually with some plain Lay’s potato chips.
Well, it just so happened that we had some bags of chips too… with plain Lay’s!
So that’s my lunch today. There’s just something so nostalgic about a PB&J sandwich. Takes me back to days when life was so much simplier (and you didn’t have to think about spending money to get lunch… LOL).
I should add– the reason this takes me back to elementary school is because I was only in public school from kindergarten til second grade. After that, I was homeschooled til I graduated!
While I’m sure lunches at home were different- my food preferences haven’t changed that much since I was a kid. Still super picky… and still love a good ol’ PB&J.
My favorite combo is creamy peanut butter and grape jelly. I also like more PB than J! I learned through the years that putting peanut butter on both pieces of bread and then the jelly in between keeps the bread from getting soggy. You can also mix the two together in a bowl and then spread on — so much less likely for the jelly to fall out like it did on me today! But I was too lazy to do it that way today.
Also, have you ever tried a grilled PB&J? You essentially make it the same way as a grilled cheese. And it’s delicious! May have to do that this weekend… hmmmm…
